Quiche

Ingredients for 2 quiches:

  • 2 pie shells

  • 5-6 eggs

  • Mushrooms

  • 1 big onion

  • Emmental / Swiss cheese

  • Spinash (or ham if non-veggie quiche)

  • 500ml of sour cream

  • 250ml of milk (skim, 1% or 2%)

  • Salt, pepper

Steps:

  1. Preheat oven to 200 C (400 F) degrees.

  2. Dice onion and slice mushrooms. Fry them until they start being cooked.

  3. Mix 3-4 eggs with 2 egg yolks. Whisk them, add some salt and pepper to it.

  4. Add the sour cream and the milk little by little to the eggs. Mix constantly everything as you keep adding more cream and milk.

  5. Chop the spinach into small bits (or the ham - or both!)

  6. Shred some cheese.

  7. Place the spinach/ham, mushrooms and onions at the bottom of the pies. Put some cheese over then. And finally, pour equally the egg mix on top of both dishes.

  8. Put the quiches in the over for about 25 mins. Put a knife in one quiche then: if it does not come out clean, add 5 more minutes for the quiches to cook.
